Tortellini Skillet Lasagna

1 lb turkey Italian sausage (I actually used regular)

24-oz jar of Marinara

19-oz bag of frozen cheese tortellini

1 egg

15-oz  ricotta cheese

1/4 cup Parmesan cheese

1 cup mozzarella

1 teaspoon basil

1 teaspoon oregano

1/4 teaspoon salt

1/4 teaspoon pepper



Heat a skillet over medium heat.

Cook sausage until browned and cooked through.

Add sauce and reduce heat.

Add tortellini and cook 5 minutes.

In a small bowl, combine egg, ricotta, mozzarella, Parmesan, basil, oregano, salt, and pepper.

Drop cheese mixture into sauce, cover, and cook an additional 3-5 minutes or until slightly melted.




Either there is a direction point missing to boil the tortellini before putting in skillet or using dry tortellini made all the difference.  After a solid 45 minutes to an hour, the sauce was burnt and the tortellini was hard.  Completely inedible.  Next time – either boiling raw tortellini or using frozen as directed.  I’d like to give it another try at some point though.


Baked Ravioli

Ravioli, baked, cheese, not really anything else to say


Baked Ravioli

1 25 oz bag of frozen ravioli

1 26 oz jar of marinara sauce

2 cups shredded mozzarella cheese

Parmesan cheese for sprinkling



Preheat oven to 400 degrees.

Spread 3/4 cup of sauce in baking dish (that was previously sprayed with cooking spray).  Arrange ravioli in single layer of sauce.  Top with remaining sauce and half the mozzarella.  Add a second layer of raviolis, and then sauce and mozzarella.

Cover with aluminum foil and bake for 30 minutes.  Remove foil and bake uncovered for 10 to 15 minutes.  Let stand for 10 minutes before serving.



It’s awfully simple but taking an hour to prep, bake, and stand before eating is awfully a lot for just pasta sauce and cheese.

Meatball Sub Casserole

Made this more than a couple weeks ago so here we go:

1 loaf Italian bread, cur into 1-inch thick slices

1 8-oz package cream cheese, softened

1/2 cup mayonnaise

1 tsp Italian seasoning

1/4 tsp pepper

2 cups shredded mozzarella cheese

1 lb package fully cooked frozen meatballs, thawed

1 28oz jar pasta sauce



Preheat oven to 350 degrees.

Arrange bread slices in a single layer in ungreased 9×13 baking dish and fill in gaps with small bits of bread.

In a bowl, combine cream cheese, mayonnaise and seasonings.  Spread over bread slices.  Sprinkle with 1/2 cup shredded mozzarella.

Gently mix together sauce and meatballs, spoon over cheese.

Sprinkle with remaining cheese.

Bake uncovered for 30-35 minutes.



I didn’t use the mayonnaise – I’m not a big fan.  But overall I wasn’t a fan of this recipe, and not because I think it was missing mayonnaise.  I didn’t like the textures of well everything.  It also took longer than if I’d just made regular meatball subs and most definitely doesn’t seem worth the extra effort and time.
