I forgot to post last week’s… slacker… Here’s this week’s.

Bacon Cheeseburgers – with Dole southwest salad

BBQ Chicken Sandwiches – with baked beans

Jalapeno Popper Mac & Cheese – with bacon… and I definitely planned a vegetable but can’t remember what it was now….

Gnocchi in a Butter Sauce – with Caesar salad and garlic bread. My new recipe for last week was homemade gnocchi.  It did not work out as planned… Purchased from the frozen food section instead. Still counting it as new though since I’ve never tried that gnocchi before and usually buy rather than make garlic bread. (Gotta take the little things when I can, amirite?)

Fajita Stuffed Chicken with refried beans

Pasta Alfredo with Broccoli and Brushetta: leftover from last week, adding brushetta though to give it something new.

Cheesesteaks with Southwest Salad

Baked Honey BBQ Popcorn Chicken: new recipe with mashed potatoes and green beans

Cheeseburger Egg Rolls: I thought I made these before but maybe it was on a list that didn’t end up happening… either way serving with baked beans and french fries

Plus laundry day (always an eat out night) and a night out with the Husband (after 2 back to back weekends where he was busy Friday and Saturday nights) makes this a full week.

A few back to back busy weekends messed me all up on this. My new year’s resolution included 2 new recipes a month. I more than met that in January but only did one new one in February. Hopefully March goes a bit better.  Here we go though:

Oven Fajitas

Ham & Cheese Sandwiches with Tomato Bisque Soup: been craving tomato soup and sammies always goes along with it well.

Jalapeno Popper Mac and Cheese with Hot Dogs

Chicken Tacos: Husband found a ridiculous video, “It’s Raining Tacos!” and now I really want tacos.

Turkey Chili and Cornbread: new recipe

Pasta Alfredo with Broccoli: one box pasta, one can Alfredo and one bag of frozen veggies work well.

Frozen Pizza with Caesar Salad: this is surprisingly quiet week and if I’m planning on cooking every day, I’m going to need a super simple, can’t talk my way out of cooking it option

Salisbury Steak Meatballs: served on mashed potatoes with side of broccoli, new recipe

Breakfast for Dinner: pancakes, Mom’s breakfast potatoes, eggs and bacon

Lemon Pepper Chicken: with instant mashed potatoes and green beans

I told you there’d be a lot of repeats.

Jalapeno Popper Mac and Cheese

2-3 jalapenos, seeded and diced (I’ve always used 3 and could probably be okay with a 4th. Husband would probably prefer more than that or a spicier pepper used)

1 teaspoon garlic powder

1/2 teaspoon salt

Cream cheese, 1 block (8 oz)

2 cups milk

1 cup water

8 oz dried pasta

8 oz shredded Monterey jack cheese

1/2 cup bread or cracker crumbs

1 tablespoon olive or coconut oil


Preheat the oven to 400*.

In a large skillet, saute peppers with garlic powder and salt, cooking until softened (about 5 minutes).

Stir in cream cheese. Mix until until melted.

Add milk, water, and pasta. Bring to boil and then simmer for 10-15 minutes on medium or until the pasta is cooked through. Stir regularly.

Add in cheese; stir to melt.  Transfer pasta/cheese mixture to an oven safe pan.

In a small bowl, mix crumbs with oil to evenly coat.  Add to the top of your mac and cheese.

Bake for 5-10 minutes or until brown on top.


The original post calls for 1 medium onion, diced, to be cooked with the jalapeno in step one.  Husband isn’t a big fan of onions and I force them on him in enough other meals that I figure I’d spare him on this.

Usually makes 4-5 servings, depending on how hungry we are.

I’ve done some variations.  I’ve added bacon before – 6 slices just chopped up and mixed in.  I’ve switched pastas – penne, cavatappi, rotini.  Monterey jack cheese as listed sometimes or switched with cheddar or colby-jack or pepper jack depending on my mood.  Most recently I used the Monterey jack cheese and added slices of pepper jack cheese on top of pasta/cheese mix and below the crumbs.

I have made this on several occasions and it’s quickly becoming one of my favorite meals.  It doesn’t take too long to make, not too difficult, and is super delicious.

I’m really late writing about this one.  I’m actually also really late in actually cooking any of the below too.  We hosted a Super Bowl party on Sunday and ended up with a lot of leftovers that we’d been eating through the past few days.  Don’t be surprised when next week’s list is a lot of the below

Baked Ziti: with a side Caesar salad and garlic knots (forgot the ricotta last week so held off on this until this week, or given the above, maybe next week again…)

Sausage Peppers & Onions: on a roll

Cheesesteaks: with Dole’s Southwest salad, french fries and bacon jalapeno fry sauce

Grilled Ham & Cheese sandwiches: with a side salad

Baked Ziti: with a side Caesar salad and garlic knots (although I forgot ricotta at the food store so I guess it’ll just be pasta with sauce…)

BBQ Chicken Quesadilla: with side baked beans and corn (new)

Burritos: with side of Southwest corn (swapping out the taco sauce in the recipe for a can of rotel to switch it up a little)
